  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • cup grated Parmesan

Instructions

  1. Marinate chicken in olive oil, garlic powder, onion powder, salt, pepper, and lemon juice for at least 15 minutes.
  2. Preheat oven to 200C (390F). Toss halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until crispy.
  3. Preheat grill or grill pan over medium-high heat. Grill marinated chicken for 5-6 minutes per side until fully cooked (internal temperature should reach 75C/165F).
  4. In a saucepan, melt butter over medium heat. Stir in flour for about a minute. Gradually whisk in milk until smooth. Add minced garlic; simmer until thickened. Mix in grated Parmesan cheese until melted.
  5. Serve sliced grilled chicken alongside roasted Brussels sprouts, drizzled generously with creamy sauce.
