  • 1 boneless chicken breast
  • 1 medium sweet potato, halved
  • 1 cup asparagus spears, trimmed
  • Cucumber, sliced
  • 1 tbsp olive oil (for chicken)
  • 1 tsp olive oil (for veggies)
  • tsp garlic powder
  • tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place the halved sweet potato cut side up on a baking sheet, lightly oil and season. Roast for 30-35 minutes until tender.
  2. Rub the chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill over medium-high heat for 5-6 minutes per side until cooked through. Slice thinly.
  3. In the last 10 minutes of roasting time for the sweet potato, sauté asparagus and cucumber in olive oil for about 5-6 minutes until tender-crisp.
  4. Assemble your bowl with grilled chicken slices, roasted sweet potato halves, asparagus spears, and cucumber slices.
