  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 2/3 cup Greek yogurt
  • 1/3 cup vegetable oil
  • 1 tsp pure vanilla extract
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp finely grated lemon zest
  • 1 1/3 cups blueberries, fresh or frozen (with 1/2 cup set aside for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a large bowl, whisk together all-purpose flour, sugar, cinnamon, baking powder, and salt until well combined.
  3. In another bowl, mix melted butter, eggs, Greek yogurt, vegetable oil, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Gently fold the wet ingredients into the dry mixture using a rubber spatula until just combined; some lumps are fine.
  5. Coat the blueberries with a tablespoon of flour to prevent sinking, then gently fold them into the batter.
  6. Fill each muffin cup evenly with batter and top with additional blueberries for garnish.
  7. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling for a few minutes before transferring to a wire rack.
