Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, place the chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce the heat, simmer until the chicken is fully cooked (about 15-20 minutes), then remove the chicken and allow it to cool.
  3. In another pot, heat olive oil over medium heat. Sauté chopped onion, carrots, and celery until softened (5-7 minutes).
  4. Stir in minced garlic and sauté for an additional minute.
  5. Shred the cooled chicken and return it to the pot with sautéed vegetables.
  6. Pour in orzo (or rice) with more chicken broth. Add lemon juice, zest, oregano, thyme, salt, and pepper.
  7. Simmer for approximately 10-12 minutes until the pasta is cooked through.
