  • 1 cup mushrooms, sliced
  • 1 tsp olive oil or butter
  • 2 eggs
  • Avocado, sliced or mashed
  • 56 cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. For the Sautéed Mushroom & Scrambled Egg Toast: Heat olive oil or butter in a skillet; sauté sliced mushrooms for 4-5 minutes until golden. In another pan, scramble eggs until soft and creamy. Toast rustic bread to golden brown, then layer with sautéed mushrooms and scrambled eggs. Garnish with chopped parsley.
  2. For the Avocado, Cherry Tomato & Feta Toast: While preparing the mushroom toast, toast another slice of rustic bread. Spread or layer mashed avocado on top, arrange halved cherry tomatoes, sprinkle crumbled feta cheese, season with salt and pepper, and garnish with parsley.
