  • 2 Garlic Cloves
  • 1 Lime
  • 2 Boneless Skinless Chicken Thighs
  • 15g Fresh Ginger
  • 1 Red Chilli
  • 1 tsp Curry Powder
  • 350ml Water
  • 25g Fresh Coriander
  • 25g Fresh Mint
  • 0.5 Red Onion
  • 250g Microwave Rice
  • Olive Oil, Salt, Black Pepper to taste

Instructions

  1. 1. Marinate the chicken by grating half the garlic into a bowl. Squeeze juice from half the lime, season with salt, and add chicken thighs. Coat well and refrigerate for at least 30 minutes.
  2. 2. Prepare ingredients: thinly slice remaining garlic, cut ginger into matchsticks, and finely slice red chili.
  3. 3. Heat olive oil in a frying pan over medium heat. Cook marinated chicken thighs until golden brown (10-15 minutes). Transfer to a plate to rest.
  4. 4. In the same pan, sauté sliced ginger, garlic, and chili for about 3 minutes until fragrant. Add curry powder and cook for another minute. Pour in water and simmer for 5 minutes; finish with lime juice and seasoning.
  5. 5. For the herb salad, mix coriander leaves, mint leaves, and sliced red onion in a bowl.
  6. 6. Reheat microwave rice according to package instructions. Serve rice in bowls topped with broth, sliced chicken, and herb salad.
