  • 1 lb ground beef (or mix of beef and turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 5 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 12 oz linguine
  • ¾ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, egg, breadcrumbs, Parmesan cheese, parsley, minced garlic, salt, and pepper until just combined. Form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat; brown the meatballs on all sides for about 6–8 minutes total. Remove and set aside.
  3. In the same skillet over low heat, melt butter and sauté minced garlic until fragrant. Stir in lemon juice and parsley; return meatballs to coat in sauce.
  4. Cook linguine according to package directions; drain while reserving some pasta water. In a saucepan, melt butter, add cream and Parmesan until melted. Mix with linguine and adjust consistency with reserved pasta water.
  5. Serve meatballs over creamy linguine with extra garlic sauce drizzled on top.
