  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter, sugar, and ½ cup of Fruity PEBBLES™ using an electric mixer until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, combine flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until a dough forms.
  5. Fold in the remaining cup of Fruity PEBBLES™.
  6. Scoop out dough (about 3-4 tablespoons), flatten slightly, place one vegan marshmallow in the center, wrap the dough around it, and roll in remaining cereal.
  7. Place on a parchment-lined baking sheet, spaced 3 inches apart. Bake for 8-11 minutes until marshmallows start to seep through cracks.
  8. Cool on the sheet for a few minutes before transferring to a wire rack.
