  • 2 Garlic Cloves
  • 50g Butter
  • 1200ml Beef Stock
  • 15g Fresh Thyme
  • 400g Baguette
  • 150g Comté Cheese
  • Olive Oil
  • Salt
  • Black Pepper

  1. Peel and slice the onions. In a heavy-bottomed saucepan over medium heat, add olive oil, sliced onions, and salt.
  2. Cook the onions for about 30 minutes until soft and pale golden.
  3. Add finely sliced garlic and butter; cook for an additional 5 minutes until fragrant.
  4. Pour in the beef stock, scraping the bottom of the pan to deglaze. Add thyme leaves and simmer for 10 minutes.
  5. Adjust seasoning to taste before serving.
  6. Slice baguette into rounds and place soup into oven-proof bowls.
