  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced (cremini or button)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients: chop onions, slice carrots, mince garlic, and slice mushrooms.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear beef chunks until browned on all sides (about 5-7 minutes). Remove from pot and set aside.
  3. In the same pot, sauté onions and carrots until softened (about 5 minutes), then add garlic and cook for an additional minute.
  4. Return seared beef to the pot with sliced mushrooms. Stir in tomato paste, thyme, bay leaf, salt, pepper, and beef broth.
  5. Bring to a gentle boil; reduce heat to low and cover. Simmer for at least 1.5 hours or until beef is tender.
  6. Remove bay leaf before serving hot with crusty bread or over rice.
