  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • salt
  • 4 shallots (diced or one medium onion)
  • 1 rib celery (diced)
  • 45 thyme sprigs
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored and cut into wedges)
  • 125 ml heavy cream

Instructions

  1. Preheat the oven to 180C/350F. Pat the chicken dry and season generously with salt.
  2. Heat olive oil in a cast iron casserole dish over medium-high heat. Brown the chicken on all sides, then remove and set aside.
  3. In the same dish, cook turkey bacon until rendered, then transfer it to the platter with chicken.
  4. Sauté diced shallots and celery until soft; add garlic and cook briefly.
  5. Stir in flour, then gradually add chicken stock and apple juice to create a gravy-like base.
  6. Return the chicken to the dish along with fresh thyme. Bring to a boil, cover, and bake for 30 minutes.
  7. Uncover and bake for another 30 minutes while frying apple wedges until golden brown.
  8. Stir in heavy cream and bake uncovered for an additional 20 minutes before adding cooked apple wedges.
