  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté onion, carrots, and garlic until onion is translucent.
  2. Season beef chunks with salt and pepper. Brown in batches in the same pot; remove and set aside.
  3. Sprinkle flour over sautéed vegetables and stir well to coat.
  4. Return browned beef to the pot with juices. Stir in tomato paste, add bouquet garni, bring to a boil then lower heat and cover. Simmer for about 2 hours.
  5. About 30 minutes before serving, sauté mushrooms in a separate pan until golden brown, then add to the stew.
