Ingredients

  • 140 g feta cheese
  • 100 g Greek yogurt
  • 3 small beets (or 2 medium)
  • ½ tablespoon olive oil
  • Juice of ¼ lemon
  • Handful of chopped roasted pistachios
  • ½ tablespoon apple cider vinegar
  • Fresh dill, chopped
  • Sea salt and black pepper, to taste

Instructions

  1. Boil the beets in salted water for about 20 minutes, until tender. Drain and let cool.
  2. While the beets are cooking, whip together feta cheese, Greek yogurt, lemon juice, olive oil, salt, and pepper until smooth and creamy.
  3. Once cooled, slice the beets and marinate them in a mixture of apple cider vinegar and olive oil for 5 minutes.
  4. Spread the whipped feta on a serving plate, layer with marinated beets, sprinkle with pistachios and fresh dill, then drizzle with olive oil.
