  • Zest from 1 lemon
  • 1 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/4 tsp table salt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Whip egg whites until foamy; gradually add sugar until stiff peaks form. Fold in almond flour, powdered sugar, cream of tartar, and vanilla extract gently until combined.
  3. Pipe small circles onto prepared sheets and let rest for about 30 minutes.
  4. Bake for approximately 20 minutes until risen with feet formed.
  5. Prepare lemon filling by whisking all filling ingredients in a saucepan over medium heat until thickened; remove from heat and stir in butter.
  6. Assemble macaron shells with lemon filling between them; optional meringue topping can be added on top.
