  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon red apple vinegar
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together olive oil, lime juice, apple vinegar, honey/agave syrup, cumin, smoked paprika, chili powder, salt, and black pepper until well combined.
  2. In a large mixing bowl, combine shredded chicken with black beans, corn, cherry tomatoes, red bell pepper, red onion, jalapeño (if using), and cilantro.
  3. Pour the dressing over the salad mixture and toss thoroughly to coat all ingredients evenly.
  4. Gently fold in diced avocado to maintain its texture.
  5. Taste the salad and adjust seasoning if needed. Chill in the refrigerator for 15 to 20 minutes before serving.
