  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 1 cup warm whole milk
  • 1 large egg
  • 1 cup + 2 tbsp cold unsalted butter (for laminating)
  • 7 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for filling)
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • 1 cup powdered sugar (for glaze)
  • 12 tbsp milk or lemon juice (for glaze)

Instructions

  1. In a large bowl, combine flour, sugar, and salt. In another bowl, mix warm milk with yeast; let sit until foamy (5–10 minutes). Add the egg and yeast mixture to the dry ingredients. Mix and knead for about 6–8 minutes until smooth. Cover and chill for 30 minutes.
  2. Prepare the butter block by placing cold butter between parchment sheets; pound into an 8-inch square and chill until firm yet pliable.
  3. Roll dough into a 16-inch square, place the butter in the center like a diamond, fold corners over to seal, then roll into a long rectangle (8×24 inches). Fold into thirds like a letter and chill for another 30 minutes. Repeat this rolling and folding two more times.
  4. Roll dough to about 1/4 inch thick; cut into squares (4 inches). Add cream cheese filling (about one tablespoon) to each square's center. Shape as desired.
  5. Place on parchment-lined baking sheets; let rise at room temperature for one hour while preheating oven to 390°F (200°C). Brush with egg wash or milk before baking for about 15–20 minutes until golden brown.
  6. Let cool completely before glazing with a mixture of powdered sugar, milk or lemon juice, and vanilla extract.
