  • 4 ounces semi-sweet or bittersweet chocolate

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast.
  2. Melt 0.25 cup unsalted butter and add it with cold milk to the dry ingredients; mix until forming a dough.
  3. Knead gently on a floured surface for about 5 minutes until smooth.
  4. Wrap dough in plastic wrap and chill in the refrigerator for at least 90 minutes.
  5. Prepare the butter block by rolling softened 1.5 cups unsalted butter between parchment paper into a rectangle; chill until firm.
  6. Roll out the chilled dough into a larger rectangle, encasing the butter block completely.
  7. Roll out again and fold in thirds; repeat twice more with chilling periods.
  8. Roll out final dough into a large rectangle; cut triangles and place small pieces of chocolate at their wide ends before rolling into croissant shapes.
  9. Let formed croissants rise on a baking sheet lined with parchment paper until doubled in size (about 60-90 minutes).
