These baked churro bites are golden on the outside, soft and fluffy inside, and coated in a sweet cinnamon-sugar mixture. They deliver all the cozy flavor of classic churros without deep frying, making them perfect for parties, holidays, or an easy homemade dessert everyone will love.

Ingredients

For the Dough
1 1/4 cups water
5 tablespoons chilled unsalted butter
2 packed tablespoons brown sugar
1/2 teaspoon fine salt
1 1/4 cups plain flour
1 teaspoon vanilla essence
2 large eggs

For Brushing
2 tablespoons butter, melted

For the Cinnamon Sugar Mixture
1/3 cup granulated sugar
1 tablespoon ground cinnamon
1/4 teaspoon salt

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a medium saucepan over medium heat, combine the water, butter, brown sugar, and salt. Bring to a gentle boil, stirring until the butter is fully melted.
  • Reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan, about 1–2 minutes.
  • Remove the pan from heat and let the dough cool for 5 minutes.
  • Stir in the vanilla essence. Add the eggs one at a time, mixing well after each addition until the dough becomes smooth and glossy.
  • Transfer the dough to a piping bag fitted with a large star tip. Pipe small bite-sized mounds or short strips onto the prepared baking sheet, spacing them slightly apart.
  • Bake for 18–22 minutes, or until puffed and lightly golden.
  • Remove from the oven and immediately brush each churro bite with melted butter.
  • In a shallow bowl, mix together the granulated sugar, ground cinnamon, and salt. Roll the warm churro bites in the cinnamon sugar mixture until evenly coated.
  • Serve warm for the best texture and flavor.
