  • 1 teaspoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce (or use taco sauce)
  • 8 ounces cheddar cheese, shredded
  • Toppings: Diced tomato, sliced black olives, green onion, hot sauce

Instructions

  1. Heat vegetable oil in a skillet over medium heat and fry corn tortillas until golden brown and crispy (2-3 minutes per side). Drain on paper towels.
