  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking trays with parchment paper and roll out puff pastry sheets slightly. Prick with a fork and weigh down with another tray.
  2. Bake for 35-45 minutes until golden brown. Let cool completely.
  3. Trim the edges of the cooled pastry to fit an 8×8-inch square pan.
  4. In a medium saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix until combined.
  5. In another saucepan, heat milk until steaming but not boiling.
  6. Gradually whisk warm milk into the egg mixture to temper it, then return to heat and cook until thickened.
  7. Stir in vanilla seeds and cold butter until melted.
  8. Assemble by layering one piece of pastry in the pan, pouring in custard, topping with another pastry layer, covering tightly, and refrigerating for at least four hours or overnight.
  9. Cut into squares using a serrated knife and dust generously with powdered sugar before serving.
