  • 1 pound ground chicken turkey sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a skillet over medium-high heat, warm the olive oil and sauté the chicken turkey sausage until browned and cooked through, about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, add garlic and sauté until fragrant. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
  4. Add heavy cream and simmer for an additional 3-5 minutes until thickened. Stir in Parmesan cheese, cooked turkey sausage, and baby spinach until the spinach wilts.
  5. Toss the cooked penne pasta with the sauce, adding reserved pasta water as needed for desired consistency. Serve hot.
