  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel (tomatoes with green chilies)
  • 3 cups chicken broth
  • 1 block (8 oz) cream cheese, softened
  • 1 cup heavy cream (or half & half)
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef with diced onion until fully cooked; drain excess grease.
  2. Stir in minced garlic and taco seasoning until well combined.
  3. Add diced tomatoes, Rotel tomatoes with green chilies, black beans, corn, and chicken broth; bring to a gentle simmer.
  4. Lower the heat and mix in softened cream cheese until melted and smooth.
  5. Stir in heavy cream (or half & half) along with shredded cheddar cheese until creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot with your choice of toppings like tortilla chips or avocado.
