  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cups Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Prepare the coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Mix until well combined.
  3. Add pumpkin puree and blend until smooth.
  4. Pour in cold heavy cream and whip for 3-4 minutes until thickened.
  5. Quickly dip ladyfingers in coffee and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers, then add another layer of dipped ladyfingers.
  7. Pipe remaining filling on top, cover, and refrigerate for at least 4 hours before serving.
