  • 24 graham crackers, crushed
  • ¼ cup sugar
  • 2 egg yolks
  • 1 can (12oz) sweetened condensed milk
  • ½ cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Butter and line an 8-inch square baking pan with parchment paper.
  3. In a food processor, crumble graham crackers, then mix in sugar and melted butter until combined. Press this mixture into the bottom of the prepared pan.
  4. Bake the crust for 10-12 minutes until lightly browned; let cool.
  5. In a mixing bowl, whisk together sweetened condensed milk and egg yolks until smooth. Add lemon juice and mix well.
  6. Pour the filling over the cooled crust and bake for another 15-20 minutes until set and slightly browned.
  7. Allow to cool completely before refrigerating for at least an hour before cutting into squares.
