  • 1 ½ cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 1 cup granulated sugar (divided)
  • ¾ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix together graham cracker crumbs, flour, and half the sugar. Add melted butter and stir until combined.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared baking pan.
  4. Beat cream cheese in another bowl until smooth; gradually add the remaining sugar and mix well. Add eggs one at a time, followed by lemon zest, juice, and vanilla. Mix until smooth.
  5. Pour the filling over the crust and sprinkle with remaining crumb mixture.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center.
  7. Let cool for an hour at room temperature before refrigerating for at least three hours. Slice into bars and serve chilled.
