  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. Prepare all ingredients: dice onion, mince garlic, grate ginger, and cube beef.
  2. In a large pot over medium heat, melt coconut oil and brown the beef for about 5-7 minutes.
  3. Add onions and cook until translucent (3-4 minutes), then stir in garlic and ginger.
  4. Add spices (cumin, coriander, turmeric, smoked paprika, chili powder, garam masala) and mix well.
  5. Stir in chickpeas, diced tomatoes, and coconut milk; season with salt and pepper.
  6. Let simmer uncovered for 20-25 minutes until slightly thickened.
  7. For naan: mix flour, baking powder, salt, and yogurt until a dough forms; knead lightly.
  8. Cook naan in a hot skillet for about 2-3 minutes on each side until golden brown.
  9. Serve curry garnished with cilantro and lime juice alongside warm naan.
