  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rigatoni according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil and 2 tbsp butter over medium-high heat. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper. Sear for 6-8 minutes until cooked through.
  3. Add remaining butter and garlic to the skillet during the last minute of cooking.
  4. In the same skillet, pour in heavy cream and chicken broth; bring to a simmer. Whisk in softened cream cheese until smooth.
  5. Stir in Velveeta, mozzarella, and Parmesan cheeses until melted and creamy. Season with Italian seasoning.
  6. Toss rigatoni into the sauce; adjust thickness with reserved pasta water if needed.
