  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tbsp olive oil for frying
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides; set aside.
  3. In the same skillet, sauté onion and bell peppers until softened. Add garlic and smoked paprika; stir in chicken stock, cream, tomato paste, salt, and pepper.
  4. Return meatballs to the skillet and simmer covered for about 10–12 minutes until cooked through.
  5. Serve garnished with fresh parsley.
