  • Freshly ground black pepper
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 4 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
  3. In a large pot, melt butter over medium heat. Sauté onion and garlic until softened.
  4. Stir in flour; cook until golden brown. Gradually whisk in milk and cream, cooking until thickened.
  5. Season with nutmeg and black pepper. Mix in spinach, cheddar, and Parmesan until melted.
