1 lb turkey sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, diced (Yukon Gold or Russet)
4 cups turkey broth
1 cup heavy cream or half-and-half
2 cups kale or spinach, chopped
½ tsp salt (adjust to taste)
½ tsp black pepper
¼ tsp crushed red pepper flakes (optional, for heat)
1 tbsp olive oil (if needed for sautéing)
½ cup grated Parmesan cheese (for garnish)
Instructions
In a large pot or Dutch oven, heat olive oil over medium heat if necessary. Add diced onions and sauté until translucent; stir in garlic until fragrant.
Add the turkey sausage and cook until browned, breaking it apart as it cooks.
Stir in diced potatoes and pour in the turkey broth; bring to a boil.
Reduce heat to low and cover; simmer for about 15 minutes or until potatoes are fork-tender.
