Ingredients

  • 2 large eggs
  • 1 tablespoon milk or cream (optional)
  • 1 teaspoon butter or olive oil
  • Pinch of salt and pepper
  • 1 ripe avocado, sliced
  • Everything bagel seasoning or sesame seeds, for garnish
  • 1 slice whole-grain or sourdough bread, toasted
  • 1 tablespoon peanut butter (or almond butter)
  • 1 teaspoon berry jam

Instructions

  • In a small bowl, whisk the eggs with milk or cream (if using) and a pinch of salt and pepper.
  • Heat butter or olive oil in a non-stick skillet over medium-low heat. Pour in the eggs and gently stir with a spatula until soft and creamy, about 3–4 minutes. Remove from heat.
  • Slice the avocado and arrange it on the plate. Sprinkle with everything bagel seasoning or sesame seeds.
  • Toast the bread, then spread peanut butter evenly on top and drizzle with berry jam. Cut into bite-sized pieces if desired.
  • Arrange fresh blueberries and raspberries on the plate.
