  • 1 teaspoon ground cinnamon for streusel

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners or grease it lightly.
  2. In a large mixing bowl, combine flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients; mix gently until just combined.
  5. Prepare the streusel by mixing flour, brown sugar, ground cinnamon, and cold butter until coarse crumbs form.
  6. Fill each muffin cup about two-thirds full with batter and sprinkle streusel on top.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 5 minutes in the pan before transferring to a wire rack.
