  • 2 lbs beef chuck, cut into large cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • Coconut milk (enough to cover the beef)

Instructions

  1. In a large pot or Dutch oven, heat vegetable oil over medium heat. Sauté the onion until soft and translucent. Add garlic and ginger; cook for one more minute.
  2. Increase heat to medium-high and brown the beef cubes in batches; remove and set aside.
  3. Lower heat back to medium, add red curry paste, turmeric, cinnamon, cumin, and chili powder (if desired). Cook for about two minutes until fragrant.
  4. Return the browned beef to the pot and pour enough coconut milk to cover it completely. Bring to a gentle simmer, reduce heat to low, cover, and cook for 2-3 hours until beef is tender.
  5. Adjust seasoning if necessary and serve hot over rice or alongside bread.
