Warm up this winter with our delightful Chicken Shorba Recipe, a comforting spiced chicken soup that envelops you in flavors reminiscent of cozy gatherings and chilly nights. This one-pot wonder combines tender chicken with aromatic spices, creating a rich broth that nourishes both body and soul.

  • 1 tablespoon ghee or butter
  • 1 small onion, roughly chopped
  • 34 garlic cloves, skin on
  • 2-inch ginger, roughly chopped
  • 15 fresh cilantro stalks, chopped separately
  • 1 bay leaf
  • 12 Kashmiri dried chilies
  • 8 black peppercorns
  • 1 lb bone-in skinless chicken thighs & drumsticks
  • 3/4 teaspoon salt
  • 4 cups warm water
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon fresh cracked black pepper (to taste)
  • Optional: heavy cream or 1/4 cup milk, lemon, chopped scallions for garnish

Instructions

  1. Prepare all ingredients to ensure a smooth cooking process.
  2. Heat the pot over medium heat and melt the ghee.
  3. Sauté onion, garlic, ginger, cilantro stems, and whole spices for about a minute without browning.
  4. Add chicken pieces to the pot, sear lightly for a minute on each side, then sprinkle salt and add enough water to cover.
  5. Bring to a boil; reduce heat and simmer covered for 35 to 45 minutes.
  6. Strain the broth from chicken using a colander; discard solids. Shred chicken once cooled.
  7. Return broth to the pot; add shredded chicken, cilantro leaves, garam masala, black pepper, and cream if using. Simmer for an additional 5 minutes.
  8. Serve warm with lemon slices and scallions.
