  • 1 lb. boneless skinless chicken breast (or thighs)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 ½ lbs. Yukon Gold potatoes (cubed)
  • 6 strips turkey bacon
  • Assorted seasonings (salt, pepper, garlic, herbs)

Instructions

  1. In a large soup pot, cook the turkey bacon over low heat until crispy. Set aside and reserve drippings.
  2. Season the chicken with salt and pepper. Sear in the same pot until golden brown; set aside to cool.
  3. Add reserved drippings to the pot and sauté onions, carrots, celery for about 5 minutes.
  4. Stir in minced garlic and seasonings, then add flour and mix for another 2 minutes.
  5. Gradually add chicken broth and half-and-half while stirring continuously to avoid lumps.
  6. Add cubed potatoes and bring to a boil; reduce heat and simmer for about 20 minutes until tender.
  7. Stir in shredded cheese and garnish with green onions before serving.
