  • 8 chicken thighs
  • 1/2 cup green olives, pitted
  • 1/2 cup black olives, pitted
  • 1/2 cup prunes, chopped
  • 1/4 cup olive oil
  • 1/4 cup apple vinegar (or fruit juice)
  • 1/4 cup chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, apple vinegar (or fruit juice), chicken broth, minced garlic, dried oregano, salt, and pepper.
  2. Place the chicken thighs in a large baking dish and pour the marinade over them. Scatter green olives, black olives, and chopped prunes on top. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Let the marinated chicken sit at room temperature for about 15 minutes before baking uncovered for 45-50 minutes until cooked through (internal temperature of 165°F or 75°C).
  5. Allow resting for a few minutes before serving with your choice of side dishes.
