  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Olive oil for sautéing
  • Salt & pepper to taste

Instructions

  1. Cook rice in salted water until tender.
  2. In a skillet or wok, heat olive oil over medium heat. Sauté chicken until cooked through (about 5-7 minutes). Remove and set aside.
  3. Add sesame oil to the pan; sauté onions until translucent. Then add garlic, broccoli, and mushrooms; cook until tender-crisp (4-5 minutes).
  4. Return chicken to the pan; mix in soy sauce, salt, and pepper.
  5. Add cornstarch slurry and let simmer until sauce thickens.
  6. Serve hot over rice.
