  • 2 tablespoons butter
  • 2 tablespoons flour

  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix
  • 2 small boneless skinless chicken breasts
  • 2 cups uncooked rotini pasta
  • Salt/Pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large skillet over low heat, cook the bacon until crisp, then set aside, reserving drippings.
  2. Slice chicken breasts thinly and season with salt, pepper, onion powder, and Italian seasoning. Sear in the reserved drippings until golden brown and fully cooked. Let rest before cubing.
  3. Boil salted water in a pot and cook pasta until al dente; drain well.
  4. In the same skillet, melt butter over medium heat and sauté garlic until fragrant. Add flour to form a roux. Gradually stir in half and half until smooth, then mix in ranch seasoning followed by cheddar cheese until melted.
  5. Combine drained pasta with cheese sauce and cubed chicken until well coated before serving warm.
