  • 8 bone-in, skin-on chicken thighs
  • Water (enough to cover chicken)
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • 1 cup pearl couscous
  • 1/3 cup fresh dill, chopped
  • Juice of 1 lemon
  • Your preferred seasoning salt

Instructions

  1. In a large pot, place chicken thighs and cover with water. Bring to a boil over medium-high heat, then reduce to low and simmer.
  2. Meanwhile, heat olive oil in a separate pan over medium heat. Sauté diced onion and celery until softened (about 5–7 minutes), then add to the pot with chicken.
  3. Season with your preferred seasoning salt and allow the mixture to simmer for about 1 hour.
  4. Remove the chicken once cooked through; stir in pearl couscous into the broth and cook for about 10 minutes.
  5. Shred the cooled chicken meat off the bones and return it to the pot along with fresh dill.
  6. Add lemon juice and adjust seasoning with salt and pepper as needed before serving hot.
