  • 1 c graham cracker crumbs
  • c packed brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 c butter (melted)
  • 4 c unsweetened finely shredded coconut
  • 2 cans (14 oz each) sweetened condensed milk
  • 2 jars (10 oz each) maraschino cherries, drained and chopped
  • 2 tsp vanilla extract
  • 1 tsp almond extract

Instructions

  1. Preheat the oven to 325°F and grease a 9×13-inch baking pan.
  2. In a bowl, combine flour, graham cracker crumbs, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
  3. Press the mixture evenly into the bottom of the prepared pan.
  4. In another bowl, mix coconut, sweetened condensed milk, chopped cherries, vanilla extract, and almond extract until well combined. Pour over the crust.
  5. Bake for 35-40 minutes until golden brown around the edges.
