  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup zucchini, sliced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs mixed with 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly steam or blanch the broccoli, cauliflower, and carrots until just tender; pat dry.
  3. In a saucepan over medium heat, melt butter. Whisk in flour to create a roux.
  4. Gradually add milk while whisking until smooth and thickened. Stir in cheddar, mozzarella, garlic powder, mustard powder, salt, and pepper until melted.
  5. Layer the steamed vegetables in a greased baking dish and pour the cheese sauce over them, gently mixing to coat.
  6. Top with breadcrumbs mixed with melted butter and bake uncovered for 25–30 minutes until bubbly and golden brown.
  7. Let rest for 10 minutes before serving.
