  • 400g extra lean ground beef
  • 400g canned chopped tomatoes
  • 500g gnocchi
  • 120g mature cheddar, grated
  • 240ml chicken or beef stock
  • ½ tablespoon dried mixed herbs
  • 3 tablespoons tomato paste
  • 1 teaspoon granulated sweetener or sugar (optional)
  • Salt and black pepper to taste
  • Olive oil cooking spray
  • Few fresh basil leaves, torn

Instructions

  1. Preheat your oven’s broiler.
  2. In a frying pan over medium heat, sauté shallots, carrot, and celery until softened.
  3. Add garlic and ground beef; cook until browned.
  4. Stir in chopped tomatoes, herbs, stock, and tomato paste; simmer for about 20 minutes until thickened.
  5. Mix in gnocchi and let simmer for an additional 5-8 minutes.
  6. Adjust seasoning with salt and pepper.
  7. Transfer to a baking dish, top with cheddar cheese, and broil for about 4 minutes until golden brown.
  8. Garnish with torn basil before serving.
