  • 1 Tbsp butter or olive oil
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ⅛ tsp black pepper, plus more to serve
  • ½ tsp fine salt, plus more to taste
  • 23 Tbsp fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, melt the butter or olive oil. Sauté the onion with a pinch of salt and pepper for about 5 minutes until soft. Add garlic and cook for another minute.
  2. Stir in the chopped carrots, potatoes, celery, herbs, salt, and pepper; cook for 2-3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer and cover; cook for about 20 minutes.
  4. Allow the soup to cool slightly before blending part of it until smooth using a blender or immersion blender.
  5. Stir the blended portion back into the pot and mix well. Adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley and black pepper.
