  • 4 cups chicken or vegetable broth
  • 1 large onion, thinly sliced
  • 4 slices of turkey bacon, chopped
  • 2 tablespoons olive oil
  • 1/2 cup dry apple cider vinegar (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the broth in a medium saucepan over medium heat until warm.
  2. In a large skillet, cook the turkey bacon until crispy; remove and drain on paper towels.
  3. In the same skillet, sauté onions in olive oil until caramelized; season with salt and pepper.
  4. Toast the Arborio rice in the skillet for 2–3 minutes.
  5. Optionally deglaze with apple cider vinegar, stirring until absorbed.
  6. Gradually add warmed broth one ladle at a time, stirring frequently until absorbed before adding more.
  7. Once creamy and al dente, stir in caramelized onions, turkey bacon, butter, and Parmesan cheese.
