  • 1 bag (14-16 oz) mini vegan marshmallows (reserve some for topping)
  • 6 tablespoons butter
  • 14 oz caramels
  • 1/2 cup heavy cream (divided)
  • 6 oz chocolate chips
  • 1 cup chopped pecans (optional)

Instructions

  1. Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a saucepan over medium-low heat, melt butter and mini vegan marshmallows until smooth.
  3. Stir in Rice Krispie cereal until well mixed; press into the prepared pan evenly.
  4. Melt caramels with 1/4 cup heavy cream in a double boiler until smooth; pour over the Rice Krispie base and refrigerate for 5 minutes.
  5. Melt chocolate chips with remaining cream in a microwave-safe bowl; spread over the caramel layer.
  6. Sprinkle chopped pecans and additional chocolate chips on top; drizzle with leftover caramel if desired. Chill until set before cutting into squares.
