  • 12 oz rotini pasta

  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

  1. Boil salted water in a large pot. Cook rotini until al dente (about 9-10 minutes). Reserve ½ cup pasta water, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken for 7-8 minutes until golden brown. Add half the garlic in the last minute. Remove chicken and set aside.
  4. Lower heat; add remaining butter and garlic to the skillet. Sauté until fragrant (30 seconds).
  5. Pour in heavy cream; simmer for 2-3 minutes until slightly thickened.
  6. Stir in mozzarella and Parmesan until melted into a sauce.
  7. Season sauce with Italian seasoning, crushed red pepper flakes, salt, and pepper.
  8. Toss cooked rotini in the sauce, adding reserved pasta water as needed for consistency.
