  • 1 cup (200g) light brown sugar, firmly packed

  • 1 ½ cups (354ml) buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened (for icing)
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed (for icing)
  • 1 ½ tsp vanilla extract (for icing)
  • ¼ tsp salt (for icing)
  • 4 ½ cups (562g) powdered sugar (for icing)
  • 1 tbsp heavy cream (for icing)
  • ⅓ cup (35g) pecan halves, very finely chopped, optional (for topping)

Instructions

  1. Prepare the browned butter by melting unsalted butter in a saucepan over medium-low heat until golden specks form. Cool completely.
  2. Preheat your oven to 350°F (175°C). Grease three 8-inch round pans and line with parchment paper.
  3. In a large bowl, whisk together cake flour, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
  4. Combine cooled browned butter with dry ingredients using an electric mixer until well blended.
  5. In another bowl, whisk buttermilk, eggs, and vanilla extract; then gradually add to the butter mixture until just combined. Fold in finely chopped pecans.
  6. Divide batter among prepared pans and bake for about 30 minutes or until a toothpick comes out clean from the center. Let cool before frosting.
  7. For icing, beat together softened unsalted butter and cream cheese until smooth; add brown sugar, vanilla extract, salt, powdered sugar, and heavy cream until fluffy.
  8. Assemble the cake by layering with icing between each layer and frosting the outside.
