  • 1 lb lean ground beef
  • 1 small yellow onion, diced
  • 23 garlic cloves, minced
  • Salt
  • Black pepper
  • 12 oz romaine lettuce
  • 1 cup chopped grape tomatoes
  • 1/4 cup diced red onion
  • 1/21 cup shredded cheddar cheese (to taste)
  • 3/4 cup diced dill pickles
  • 2 tbsp light mayo
  • 2 tbsp ketchup
  • 1 tbsp pickle juice
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced yellow onion and minced garlic for about 5 minutes until softened.
  2. Add ground beef to the skillet; season with salt and black pepper. Cook until browned and fully cooked.
  3. In a small mixing bowl, combine light mayo, ketchup, pickle juice, onion powder, garlic powder, salt, and pepper to make the special sauce.
  4. To assemble the salad bowl, layer romaine lettuce at the bottom and top with cooked beef mixture, chopped tomatoes, red onion, shredded cheddar cheese, and diced pickles. Drizzle with special sauce.
