  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices cooked turkey bacon
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a skillet over medium heat for 1-2 minutes.
  3. Crack the eggs into a mixing bowl and whisk until combined.
  4. Melt butter in the skillet, then pour in the beaten eggs. Cook without stirring for about 1-2 minutes, lifting edges gently with a spatula until set. Season with salt and pepper, then fold and remove from heat.
  5. Slice each croissant in half horizontally and place on a baking sheet cut side up. Bake for about 5 minutes until slightly crispy.
  6. Spread mayonnaise on one half and Dijon mustard on the other half of each croissant. Layer cheddar cheese, turkey bacon, and scrambled eggs before closing with the top halves.
