  • 230 g Caster Sugar
  • 10 g Blood Orange Zest
  • 170 g Whole Eggs
  • 115 g Double Cream
  • 185 g Cake Flour
  • 3 g Baking Powder
  • 3 g Fine Sea Salt
  • 60 g Neutral Oil (Vegetable or Groundnut)
  • 50 g Blood Orange Juice
  • 50 g Sugar (for syrup)
  • Lemon Juice (for syrup)
  • Blood Orange Juice (for syrup)
  • 3 g Powdered Vegan Gelling Agent
  • 18 g Cold Water
  • 100 g Whole Milk
  • 135 g Dark Chocolate, Melted
  • 10 g Glucose
  • 200 g Double Cream (for optional chocolate cream)
  • 100 g Icing/Powdered Sugar

Instructions

  1. Preheat your oven to 160C/320F (non-fan assisted). Grease and flour a 2lb loaf tin.
  2. In a mixing bowl, combine the caster sugar and blood orange zest; rub together until fragrant.
  3. Add whole eggs and whisk using a stand mixer or hand whisk until thickened and lighter in color (about 3 minutes).
  4. Incorporate the double cream and mix well before gently adding sifted cake flour, baking powder, and salt.
  5. Drizzle in the neutral oil until the batter is smooth.
  6. Pour the mixture into the prepared loaf tin and bake for 65-75 minutes until a skewer comes out clean.
  7. While baking, prepare the syrup by boiling sugar, lemon juice, and blood orange juice until dissolved; set aside.
  8. After baking, poke holes in the cake and soak with syrup before wrapping tightly to chill overnight.
